Despite being made of stainless steel, it arrived to me in a rusty condition. I removed as much rust as possible and sharpened the blade edge with a whetstone. The exact type of stainless steel used for this knife is not disclosed by the manufacturer. Furthermore, the knife's original selling price is too old to determine. However, it is likely to be a lower-tier model compared to the current model 'MS-300 11052' (priced at $70-80). ・What is the meaning of the characters engraved on the sides of the blades? On the left side of this knife, in addition to the characters of the alphabet, there are several Japanese characters engraved. The two larger characters mean Hirotsuna, which is the name of this knife. The smaller five characters mean Stainless Steel. ・What is Seki Masahiro? This company is one of the top manufacturers in Seki City, Gifu Prefecture, Japan's leading producer of cutlery, in every aspect, including history, reliability, and track record. They have been manufacturing and selling a variety of knives for professional and home use since 1932. They do not follow trends when it comes to knife design, but focus on designs that can remain a standard. ・Who I would recommend this knife to. I would recommend this to anyone who wants an old but honed chef's knife. *This knife can be sharpened using a whetstone, honing rod, or a simple sharpener. ■About me■I am a Japanese living in Tokyo and I love to cook.
