Description: FREE HAND SHARPENING SERVICE, PLEASE READ FOR DETAILS! Up for sale is a Nishida Shirogami (White) No. 1 Kurouchi 155mm Santoku. These knives are made by Daisuke Nishida in Kumamoto. They are rustic yet beautiful in their own way and feature extremely labor intensive Warikomi (hand forge-welded) construction. They are overall a great bargain given the effort Nishida-san puts into them. This Nishida 155mm Kurouchi Santoku features a cutting core of Hitachi Shirogami (White) No.1 high carbon steel, which is known for its superb edge taking and retention abilities. This high carbon steel is also easy to keep sharp, and overall fairly easy to sharpen. The core is hand forge-welded between two layers of softer iron to give the blade toughness. This process is very seldom used nowadays in the making of Japanese knives, and pretty much unheard of anymore at this price point. The Kurouchi finish on Nishida knives have a fairly deep texture, and besides looking nice, the rougher texture aids in food release and prevents the blade from sticking to foods. Santoku are general purpose Japanese kitchen knives able to tackle a wide range of cutting tasks. This Nishida 155mm Shirogami 1 Kurouchi Santoku features quite a stout build, with quite a tall blade for its length. These, along with the handy size will make this blade quite useful in the home or pro kitchen for smaller food items, tighter workspaces, etc. This example is also quite right-hand biased in its grind. This can somewhat increase performance for right handed use, though there should be little issue with ambidextrous use. Daisuke Nishida is a young blacksmith and knifemaker hailing from Kumamoto, Japan. He makes a wide array of kitchen and other style knives, and has gained a great reputation in recent years. Though he is mostly self-taught, he did spend time at the legendary Yoshimitsu forge as an observer, though not an official apprentice. Nishida-san's knives are some of the best values for experiencing truly traditional Japanese knives at affordable price points. The knife will be hand sharpened before shipping for the best possible user experience. Please contact me when purchasing (either through a note when checking out or a message) if you do NOT want the knife sharpened. The buyer will be able to have the knife hand sharpened twice for free in the future in either case. Since these knives are made from reactive high carbon steel and iron, it is very important to keep them dry and well maintained. While in use, please wipe the knife dry if it needs setting aside for any period of time. After use, wash by hand with soap and warm water, without any abrasive sponges, and dry quickly. If extended storage is required, apply a food safe oil to the blade before storing. After a period of use, the knife will develop a patina, making it somewhat more stain and rust resistant. Please do not put this knife in a dishwasher! That will quickly turn it into a slab of rust! Also do not cut frozen foods, bone, or other hard material. Most Japanese hand finished knives may have some minor scratches, dings, or imperfection on the blade or handle. This is normal and not out of the ordinary. This is especially true for fully hand made and finished finish knives. The knife in the pictures is the exact knife the buyer will receive.
